Ingredients For lower sugar coconut cake

  • 1 box
    sugar-free yellow cake mix
  • 3 lg
    eggs
  • 1/3 c
    oil
  • 1 c
    water
  • 1 1/2 tsp
    coconut extract/flavoring, divided
  • 1
    tub lite whipped topping, thawed
  • 1 pkg
    artificial sweetener (like sweet 'n low, equal etc...)
  • 1 1/4 c
    flaked coconut, divided (approx.)

How To Make lower sugar coconut cake

  • Ingredients for lower sugar coconut cake.

    Preheat oven to 325 degrees F. Gather ingredients.

    Spray the bottom of a 9"x13" pan or baking dish with Baker's Joy cooking spray.

    In a large bowl, mix together for a few seconds, eggs, water, oil and one teaspoon coconut flavoring.

    Add cake mix and beat with mixer on medium speed for 2 minutes.

    Pour batter into prepared pan.

    Bake at 325 degrees F for 34 to 36 minutes (until toothpick inserted in center comes out clean; don't overcook.)

    Allow to cool completely before frosting. You may refrigerate cake to speed cooling after cake has cooled on counter for at least 1/2 hour.

    To make frosting, add 1/2 teaspoon coconut flavoring, one packet of artificial sweetener and about 1/4 cup flaked coconut to whipped topping, stirring until well combined.

    Spread frosting over top of cooled cake, then evenly sprinkle remainder of flaked coconut over all.

    Cover and refrigerate leftovers.
