Ingredients
- 1 box sugar-free yellow cake mix
- 3 large eggs
- 1/3 cup oil
- 1 cup water
- 1 1/2 teaspoons coconut extract/flavoring, divided
- 1 - tub lite whipped topping, thawed
- 1 package artificial sweetener (like sweet 'n low, equal etc...)
- 1 1/4 cups flaked coconut, divided (approx.)
How To Make lower sugar coconut cake

Step 1Preheat oven to 325 degrees F. Gather ingredients.

Step 2Spray the bottom of a 9"x13" pan or baking dish with Baker's Joy cooking spray.

Step 3In a large bowl, mix together for a few seconds, eggs, water, oil and one teaspoon coconut flavoring.

Step 4Add cake mix and beat with mixer on medium speed for 2 minutes.

Step 5Pour batter into prepared pan.

Step 6Bake at 325 degrees F for 34 to 36 minutes (until toothpick inserted in center comes out clean; don't overcook.)

Step 7Allow to cool completely before frosting. You may refrigerate cake to speed cooling after cake has cooled on counter for at least 1/2 hour.

Step 8To make frosting, add 1/2 teaspoon coconut flavoring, one packet of artificial sweetener and about 1/4 cup flaked coconut to whipped topping, stirring until well combined.

Step 9Spread frosting over top of cooled cake, then evenly sprinkle remainder of flaked coconut over all.

Step 10Cover and refrigerate leftovers.
