Ingredients

  • 3 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups butter,softened (3 sticks)
  • 3 cups granulated sugar
  • 1 tablespoon grated lime zest
  • 5 large eggs, room temp
  • 1 cup evaporated milk
  • GLAZE
  • 2 cups confectioner's sugar
  • 1/4 cup butter,melted (1/2 stick)
  • 1-2 tablespoon hot water
  • 1 tablespoon grated lime zest

How To Make lime pound cake

  • Step 1
    Preheat oven to 350. Butter and flour a 10 inch Bundt pan. Sift the flour, baking powder,and salt into a large bowl.
  • Step 2
    Beat the butter,sugar and lime zest in a large bowl with an electric mixer at medium speed until creamy. Add the eggs,one at a time, until just blended after each addition.
  • Step 3
    With mixer at low speedy, gradually beat in the dry ingredients, alternating with the milk. Spoon batter into prepared pan. Bake for 70-80 minutes, or until a toothpick comes out clean.
  • Step 4
    Run a knife around the edges of pan to loosen cake. Cool the cake in the pan for 15 minutes. Turn onto a rack and cool completely.
  • Step 5
    Glaze: Beat the confectioner's sugar and butter in a medium bowl. Beat in enough of the water to make a glaze. Drizzle the cake with glaze. Sprinkle the cake with the lime zest.
