baking powder
1/2 tsp
1 1/2 c
butter,softened (3 sticks)
3 c
granulated sugar
1 Tbsp
grated lime zest

eggs, room temp
1 c
evaporated milk

confectioner's sugar
1/4 c
butter,melted (1/2 stick)
1-2 Tbsp
hot water
1 Tbsp
grated lime zest

How to Make Lime Pound Cake


  • 1Preheat oven to 350. Butter and flour a 10 inch Bundt pan. Sift the flour, baking powder,and salt into a large bowl.
  • 2Beat the butter,sugar and lime zest in a large bowl with an electric mixer at medium speed until creamy. Add the eggs,one at a time, until just blended after each addition.
  • 3With mixer at low speedy, gradually beat in the dry ingredients, alternating with the milk. Spoon batter into prepared pan. Bake for 70-80 minutes, or until a toothpick comes out clean.
  • 4Run a knife around the edges of pan to loosen cake. Cool the cake in the pan for 15 minutes. Turn onto a rack and cool completely.
  • 5Glaze:

    Beat the confectioner's sugar and butter in a medium bowl. Beat in enough of the water to make a glaze. Drizzle the cake with glaze. Sprinkle the cake with the lime zest.
