Ingredients

  • 3 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 1/2 c
    butter,softened (3 sticks)
  • 3 c
    granulated sugar
  • 1 Tbsp
    grated lime zest
  • 5 large
    eggs, room temp
  • 1 c
    evaporated milk
  • GLAZE

  • 2 c
    confectioner's sugar
  • 1/4 c
    butter,melted (1/2 stick)
  • 1-2 Tbsp
    hot water
  • 1 Tbsp
    grated lime zest

How to Make Lime Pound Cake

Step-by-Step

  1. Preheat oven to 350. Butter and flour a 10 inch Bundt pan. Sift the flour, baking powder,and salt into a large bowl.
  2. Beat the butter,sugar and lime zest in a large bowl with an electric mixer at medium speed until creamy. Add the eggs,one at a time, until just blended after each addition.
  3. With mixer at low speedy, gradually beat in the dry ingredients, alternating with the milk. Spoon batter into prepared pan. Bake for 70-80 minutes, or until a toothpick comes out clean.
  4. Run a knife around the edges of pan to loosen cake. Cool the cake in the pan for 15 minutes. Turn onto a rack and cool completely.
  5. Glaze:

    Beat the confectioner's sugar and butter in a medium bowl. Beat in enough of the water to make a glaze. Drizzle the cake with glaze. Sprinkle the cake with the lime zest.
