Just wanted to have a little fun with a cake mix. What better way to bring in some sunshine. The kids loved these. Us adults loved the lemon cupcake with some cheesecake filling ;) These would also be great with a orange cake mix. Fits the name ;) Oh added some rainbow sprinkles to the cake mix for some extra fun. Enjoy.

Ingredients For lemon sunshine cupcake

  • 1 box
    lemon supreme cake mix and ingredients to make
  • 1 tsp
    lemon zest, grated
  • candy sugar drops in yellow red and orange
  • 1 box
    cheese cake pudding
  • 1 1/2 c
    milk
  • CREAM CHEESE FROSTING
  • recipe below
  • or canned cream cheese frosting dyed yellow

How To Make lemon sunshine cupcake

    Make pudding with 1 1/2 cups milk, set aside in refrigerator. Mix cake mix according to package adding lemon zest.

    Place one ice cream scoop mix per cup cake liner. Bake according, Mine took about 14min. Let cool completely. Remove center with apple corer or spoon. Put extra in bowl for cake pops ;) Place filled cupcake in refrigerator for about half hour. Remove and frost.

    FROSTING 1/2c Butter 6oz cream cheese 2tsp vanilla 2c confectioners sugar Mix melted butter, cream cheese & vanilla in hand mixer, beat till smooth. Gradually stir in sugar with beater on low till smooth. Add a few drops yellow food coloring, stir till desired yellow. Store in refrigerator.

    When frosting is set its time to decorate. Roll out sugar candies with rolling pin. Cut out square's, cut in half again for triangles. Arrange in circle to make circle. Make a smile face with decorating gel and leftover candy pieces. :D
