lemon poundcake
My youngest grandson adores citrus of all kinds and this is his most favorite cake.He asks for it for Thanksgving, Christmas and every time he gets a chance. He even asked me if I could make it into an ice cream cake like Carvel. Well I did, and it was scrumptious. It was originally made by my son in law's mother and I did change it. I changed the oil into butter, added lemon zest, and a couple of other things.

Ingredients
- 1 - pound cake mix
- 1 package lemon jello
- - grated zest of 1 lemon
- 3/4 cup apricot nectar
- 1/4 cup melted butter
- 4 - eggs
- 1 teaspoon vanilla
- LEMON GLAZE
- 1 cup powdered sugar
- 1/4 cup fresh lemon juice
How To Make lemon poundcake

Step 1Preheat oven to 350*. Oil and flour a Loaf pan or Bundt Pan. Mix all cake ingredients and beat for 2 minutes. Pour into pan. Bake at 350* for 55-60 minutes or until done. Poke holes in top of cake with a skewer and pour glaze over hot cake.

Step 2Mix powdered sugar with fresh lemon juice and pour over hot cake.
