grated lemon rind

Step-by-Step

  • 1Beat butter and sugar until smooth.
  • 2Beat in egg whites.
  • 3In large bowl, combine flour, oat bran, poppy seeds and baking soda.
  • 4Add flour mixture, yogurt, lemon juice and rind to butter mixture.
  • 5Spread batter in nonstick, 12-cup bundt pan.
  • 6Bake at 350 degrees for 40 minutes or until toothpick comes clean.
  • 7Cool in pan for 20 minutes.
  • 8Invert onto a wire rack.
  • 9For glaze, combine confectioners' sugar with lemon juice.
  • 10Drizzle on cake.
