Ingredients

  • 1/2 c
    butter
  • 1 1/2 c
    sugar
  • 3
    egg whites
  • 2/3 c
    unbleached all-purpose flour
  • 2/3 c
    oat bran
  • 1 1/2 Tbsp
    poppy seeds
  • 1/2 tsp
    baking soda
  • 1 c
    yogurt, lemon
  • 3 Tbsp
    lemon juice
  • 1 Tbsp
    grated lemon rind
  • GLAZE INGREDIENTS

How to Make Lemon-Poppy Seed Pound Cake

Step-by-Step

  1. Beat butter and sugar until smooth.
  2. Beat in egg whites.
  3. In large bowl, combine flour, oat bran, poppy seeds and baking soda.
  4. Add flour mixture, yogurt, lemon juice and rind to butter mixture.
  5. Spread batter in nonstick, 12-cup bundt pan.
  6. Bake at 350 degrees for 40 minutes or until toothpick comes clean.
  7. Cool in pan for 20 minutes.
  8. Invert onto a wire rack.
  9. For glaze, combine confectioners' sugar with lemon juice.
  10. Drizzle on cake.
