I'm not a big fan of poppy seeds but you can add them to your batter if you want to.

Ingredients

  • 1/2 cup butter
  • 1/2 cup sugar
  • 2 - eggs, separated
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 cup fresh lemon juice
  • - lemon rind, grated for topping
  • - additional sugar for topping (optional)

How To Make lemon muffins

  • Step 1
    Cream butter and sugar until smooth.Stir in egg yolks.Beat until light.
  • Step 2
    Mix flour,baking powder and baking soda. Add to creamed mixture alternately with lemon juice.
  • Step 3
    Beat egg whites until stiff. Fold into muffin mixture along with 2 tsp lemon rind,mixing just until ingredients are blended.
  • Step 4
    Fill buttered muffin tins about 3/4 full.Sprinkle each muffin with additional sugar if desired.
  • Step 5
    Bake at 375 degrees for 20 to 25 minutes or until muffins are golden brown. Cool. Remove from tins.Sprinkle with grated rind.
