I'm not a big fan of poppy seeds but you can add them to your batter if you want to.

Ingredients
- 1/2 cup butter
- 1/2 cup sugar
- 2 - eggs, separated
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 cup fresh lemon juice
- - lemon rind, grated for topping
- - additional sugar for topping (optional)
How To Make lemon muffins

Step 1Cream butter and sugar until smooth.Stir in egg yolks.Beat until light.

Step 2Mix flour,baking powder and baking soda. Add to creamed mixture alternately with lemon juice.

Step 3Beat egg whites until stiff. Fold into muffin mixture along with 2 tsp lemon rind,mixing just until ingredients are blended.

Step 4Fill buttered muffin tins about 3/4 full.Sprinkle each muffin with additional sugar if desired.

Step 5Bake at 375 degrees for 20 to 25 minutes or until muffins are golden brown. Cool. Remove from tins.Sprinkle with grated rind.
