- 2 1/2 cups flour
- 1 1/2 cups sugar cinnamon (divided)
- 1 teaspoon salt
- 1 tablespoon baking powder
- 1/2 cup vegetable oil
- 6 - eggs, separated
- 3/4 cup water
- 1 teaspoon grated lemon rind
- 2 teaspoons lemon juice
- 1/2 teaspoon cream of tartar
- FLUFFY LEMON FROSTING
- 1/2 cup butter
- 4 cups powder sugar
- 2 teaspoons lemon rind, grated
- 3 tablespoons lemon juice
- - dash of salt

Step 1sift together flour, 1 c. sugarbak. powder and salt in a small bowl. Make a well in center, add oil, egg yolks. water, lemon rind& juice.beat@ high 5 min or till smooth~ beat egg whites and cream of tarter @ room temp; add remaining sugar2T @ a time, 4 min. to soft peak, slowly pour yolk mixture in steady stream over entire surface of mixture, fold together gently, pour into greased tube pan; bake at 350 for 1 hour, invert and cool.

Step 2(Frosting)Cream butter and sugar; add remaining ingd., beat till smooth. Spread over completely cooled cake
