We have made this pound cake for quite a few years now, and everyone just loves it. I must say the secret is in the glaze though, with a surprise taste of lemon that is unexpected. I hope you like it!

Ingredients For lemon glaze pound cake

  • 1 pkg
    yellow cake mix
  • 1 pkg
    ( 3.4 oz ) instant vanilla pudding
  • 4
    eggs
  • 1 c
    cold water
  • 1/3 c
    vegetable oil
  • LEMON GLAZE
  • 1 1/2 c
    powdered sugar
  • 2 Tbsp
    reconstituted lemon juice
  • 1 Tbsp
    vegetable oil

How To Make lemon glaze pound cake

    Preheat oven to 350. Grease and flour a 10 inch Bundt pan.

    Mix together cake mix, pudding mix, eggs, water and oil in a large bowl at medium speed for 2 minutes. Pour into pan and bake at 350 for 50-60 minutes. Cool 25 minutes. Invert onto serving plate. Let cool completely.

    LEMON GLAZE

    Combine powdered sugar, lemon juice and vegetable oil in a small bowl.

    Stir until well-blended. Unlike a traditional glaze, this should be thick, like a frosting.

    Drizzle glaze from the end of a spoon over the cake, fairly thickly, shaking the spoon lightly, as you go.
