Lemon Cupcakes with Lemon Curd Filling
I used vanilla store bought frosting, but it would also be good with cream chesse frosting. Next time I plan on trying seedless raspberry or strawberry jam for the filling!
How to Make Lemon Cupcakes with Lemon Curd Filling
- Prepare yellow cake mix as normal, except add lemonade and the juice of one lemon instead of water and add 1 Tablespoon finely minced lemon zest.
Aloow cupcakes to cool on racks before next step.
- With a paring knife cut a 1-inch piece from top of each cupcake (do not discard) or use a cupcake plunger; then fill each hole with 1 teaspoon lemon curd and replace cut out.
- Frost with vanilla frosting.
