Ingredients

  • - 1/2 cup butter
  • - 1 cup sugar
  • - 2 eggs
  • - 2 cups cake flour
  • - 1 tsp baking powder
  • - 1/2 tsp salt
  • - 1/2 cup milk
  • - 1/2 cup chopped pecans
  • - grated rind of 1 lemon
  • LEMON GLAZE
  • - 1/2 cup confectioners sugar
  • - juice from 1 lemon
  • - combine ingredients mixing well . pour over warm cake

How To Make lemon coffee cake # 1

  • Step 1
    Cream butter and sugar until light and fluffy. Add eggs one at a time beating well after each addition.
  • Step 2
    Sift dry ingredients and add alternately with milk mixing well after each addition. Stir in pecans and lemon rind.
  • Step 3
    Pour batter into greased and flour 9 x 5 x 3-inch pan. Bake at 350 degrees for 55 minutes or until tests done.
  • Step 4
    Pour glaze over coffee cake. Cool 10-15 minutes before removing from pan.
