Jon loves anything lemon. Found this recipe on the web. He loves it. I added more lemon zest for flavor. Hope you enjoy it as much as we do.

  • 1 box
    yellow cake mix
  • 1/4 c
    oil
  • 1
    egg
  • 1 Tbsp
    grated lemon peel
  • FILLING FOR CHEESECAKE

  • 2 pkg
    cream cheese
  • 3/4 c
    sugar
  • 2 c
    lemon pudding (i make my own but can used prepared)
  • 3
    eggs
  • 1
    whipped topping (for garnish)

How to Make Lemon Cheesecake

Step-by-Step

  1. Heat oven to 300 degrees. Grease and flour bottom and sides of a 10 inch springform pan. Reserve 1/4 cup of cake mix. In a large bowl bear remaining cake mix, oil and 1 egg and lemon peel until crumble. Press into sides and bottom of springform pan.
  2. Beat reserved cake mix, cream cheese, pudding, and sour cream together. This will be smooth and creamy. Beat in 3 eggs, one at a time until mixed. Pour over crust.
  3. Bake approx for 1 hour and 40 min. cheese cake should be jiggle slightly when moved. Turn oven off,open door slightly leave cheeses cake in oven another 30 min.
  4. Remove cheesecake from oven. Place on cooling rack for 30 min. Loosen from pan. Cover loosely refrigerate for 4 hours. Pipe whipped topping on top.
