Ingredients

  • 1
    pkg. lemon cake mix
  • 1/3 c
    butter softened
  • 1
    egg
  • 1
    8 oz. pkg cream cheese softened
  • 1 c
    powder sugar
  • 2 Tbsp
    grated lemon peel
  • 2 Tbsp
    lemon juice
  • 2
    eggs

How to Make Lemon Cheesecake Bars

Step-by-Step

  1. Blend dry cake mix, butter and 1 egg. Press into a greased 13x9 pan.
  2. Beat cream cheese until smooth. Gradually blend in powder sugar. Stir in lemon juice and peel until smooth. Reserve 1/2 cup and refrigerate it. Beat 2 eggs into remaining or un-reserved cream cheese mixutre until blended.
  3. Spread over cake mixture. Bake at 350 until set, around 25 mins. Cool completely. Spread with reserved cream cheese mixture. Refrigerate until firm.
