For the cake mix do not use pudding in the mix type of cake mixes. The store brand works really well for this. This cake travels well for picnics.

Ingredients

1 small package lemon jello
1 cup boiling water
1 package white or yellow cake mix
4 - eggs
3/4 cup oil
1 1/2 teaspoons lemon extract
GLAZE
2 cups powdered sugar
1/3 cup lemon juice concentrate

How To Make lemon cake

Step 1

Pour lemon jello into boiling water set aside and let slightly cool. Mix remaining ingredients adding jello.

Step 2

Preheat oven 350. bake in a 13x9 pan for 30-35 minutes. Remove from oven using a meat fork poke holes all over top of cake.
Step 3

Glaze-mix and drizzle over hot cake.
