I searched online for a great recipe to use up some yellow cake mixes I had in my pantry. When I came across this recipe I made it over and over using up all my cake mixes. Once I had used up all my cake mixes I purchased a sugar free cake mix and sugar free confectioners sugar to make this diebetic friendly recipe. It is so delicious you won't believe it is sugar free!

cream cheese, softened
1 c
2 Tbsp
grated lemon peel (from 2 large lemons)
1/4 c
lemon juice (from one lemon)
1 box
sugar free yellow cake mix


2 c
sugar free confectioners sugar
2 Tbsp
lemon juice (from one lemon)

How to Make Lemon Bundt Cake


  • 1Grease and flour a Bundt pan and preheat oven to 325
  • 2In large mixing bowl beat cream cheese until totally softened.
  • 3Add eggs, lemon juice, and grated lemon then beat for at least one minute
  • 4Add rest of cake ingredients and beat two minutes more then pour batter into pan and bake for 40 minutes.
  • 5Allow cake to cool in pan then flip unto serving plate
  • 6Use two cups of confectioners sugar in a medium size bowl and whisk in just enough lemon juice to make a thick glaze. You will not need all the juice.
