Ingredients

  • BROWNIES:
  • 3/4 cup all-purpose flour
  • 3/4 cup sugar
  • 1/4 teaspoon sea salt
  • 1 stick butter, unsalted, room temperature
  • 2 x large eggs
  • 2 large lemons, zested & juiced
  • LEMON GLAZE:
  • 2 cups confectioners' sugar
  • 1 large lemon, zested & juiced
  • 1 teaspoon pure vanilla extract

How To Make lemon brownies w/ lemon glaze

  • Step 1
Preheat oven to 350 degrees F. Grease an 8" x 8" baking dish & set aside.
  • Step 2
BROWNIES: Zest & juice lemons; set aside.
  • Step 3
In standing mixer with paddle, add flour, sugar, salt & softened butter until combined.
  • Step 4
In a separate bowl, whisk together the eggs, lemon zest & lemon juice until combined. Pour into the flour mixture & beat at medium speed until smooth & creamy, 2 minutes.
  • Step 5
Pour into baking dish & bake for 23 - 25 minutes, or until just starting to turn golden around the edges & a toothpick inserted into the center of the brownies comes out clean. Allow to cool completely before glazing. Do not overbake, or the bars will be dry.
  • Step 6
LEMON GLAZE: When brownies are cooled completely, make the glaze...sift the powdered sugar, add lemon zest & juice, extract & whisk together. Spread the glaze over the brownies with a rubber spatula & let sit 1 hour. This glaze does not harden like most. Cut into bars & enjoy!
