Ingredients

  • 1/2 cup butter, room temperature
  • - lemon zest, grated 1 large
  • 1 cup sugar
  • 1 - egg
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 cups fresh blueberries
  • 1 cup buttermilk
  • 1 tablespoon sugar

How To Make lemon blueberry muffin cake

  • Step 1
    pre-heat oven 350 degrees cream butter with lemon zest and 1 cup of sugar till light and fluffy. Add the egg and vanilla and beat till combined. Meanwhile toss the blueberries with 1/4 cup of flour, then whisk together the remaining flour, baking powder and salt. Add the flour mixture to batter a little at a time alternating with the buttermilk, Fold in the blueberries
  • Step 2
    Spray a 9 inch square baking pan with non stick spray. Spread batterin pan. Sprinkle batter with 1 Tablespoon sugar.
  • Step 3
    Bake for 34-45 minutes. Check with toothpick for doneness.
