    boiling water
  • 1 c
    oatmeal, uncooked
  • 1/2 c
    butter, softened
  • 1 c
    sugar
  • 1 c
    brown sugar, firmly packed
  • 1 tsp
    vanilla extract
  • 2

  • 1 1/2 c
    all purpose sifted flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 3/4 tsp
    cinnamon
  • 1/4 tsp
    nutmeg
  • FROSTING INGREDIENTS

  • 1/2 c
    brown sugar, firmly packed
  • 3 Tbsp
    half and half
  • 1/2 c
    chopped nutmeats
  • 3/4 c
    coconut, flaked

How to Make Lazy Daisy Oatmeal Cake

Step-by-Step

  1. Cake - Pour boiling water over oats; stir to combine. Cover and let stand 20 minutes.
  2. Beat butter until creamy; gradually add sugars, beating until fluffy.
  3. Blend in vanilla and eggs.
  4. Add oats mixture; blend well.
  5. Sift together flour, soda, salt and spices.
  6. Add to creamed mixture; blend well.
  7. Pour batter into a well-greased and floured 9-inch square baking pan.
  8. Bake in preheated 350 oven 50 to 55 minutes.
  9. Do not remove cake from pan.
  10. Frosting - combine all ingredients.
  11. Spread evenly over cake.
  12. Broil until frosting becomes bubbly.
  13. Serve warm or cold.
  14. VARIATION - COCOA OATMEAL CAKE: Increase boiling water to 1-1/3 cups in above recipe. Use 3 tablespoons cocoa in place of the cinnamon and nutmeg. Prepare and bake as above.
