kit's banana cake....
I make this cake when I have lots of left over banana's. It's quick & easy to make.

Ingredients
- 2 - eggs, separated
- 1 1/2 cups sugar
- 2 cups cake flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/3 cup vegetable oil
- 1 cup banana, mashed
- 2/3 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup macadamia nuts, chopped
How To Make kit's banana cake....

Step 1Heat oven to 350F. Lightly grease & flour 2 round 8x8 inch pan.

Step 2Bake egg whites, gradually add 1/3 cup sugar at a time until stiff peaks & glossy.

Step 3In medium bowl sift the remaining dry ingredients together.

Step 4Add oil, banana & 1/2 of the milk with the vanilla. Beat for 1 min.

Step 5Combine everything together & the remaining milk & mix well.

Step 6Fold into meringue with the nuts. Pour into cake pan.

Step 7Bake for 30 to 35 mins. Cool well & frost with frosting.
