This was a recipe I had never made before but it looked so good. So I jumped in and tried it. Lots of work kind of but well worth it when done.

Ingredients

  • 1 box
    lemon cake mix
  • 1 box
    lime jello (small)
  • 3/4 c
    water
  • 1/3 c
    key lime juice (reg lime juice ok but key lime better!)
  • 1/3 c
    oil
  • 3
    eggs
  • 2-3
    drops green food coloring (optional-i used it)
  • GLAZE:

  • 1 c
    powdered sugar
  • 2-21/2 Tbsp
    key lime juice
  • FROSTING:

  • 8 oz
    cream cheese, softened
  • 1/4 c
    butter, softened
  • 1 tsp
    vanilla
  • 3 1/2 c
    powdered sugar

How to Make Key Lime Cupcakes

Step-by-Step

  1. Cake: Add all ingredients for cake - mix well. Fill cupcake papers. Bake 350 - 17-22 min. Cool 10 min then remove from pan
  2. Glaze: Mix together - add more juice if needed to make thin enough to drizzle on cupcakes - Cool 30 min.
  3. Frosting: Beat cream cheese & butter til light & fluffy. Add rest of frosting ingredients - beating all til fluffy...FROST!
