I found this recipe in an old 2005 cooking magazine...It's a keeper!!

Ingredients

3/4 c
graham cracker crumbs
2 Tbsp
sugar
2 Tbsp
butter, melted
3 pkg
8 oz. each cream cheese
1 c
sugar
3 Tbsp
flour
3
eggs, beaten
1 c
sour cream
1/3 c
key lime juice or lime juice
2 tsp
grated lime peel
2 tsp
vanilla extract
2 dash(es)
green food coloring, optional

How to Make Key Lime Cheesecake

Step-by-Step

  • 1Wrap bottom of a 9 inch springform pan with a double layer of foil; coat pan with non stick spray.
  • 2Combine the first 3 ingredients. Press onto the bottom of pan. Bake at 350* for 8-10 min, cool.
  • 3In a large mixing bowl, beat cream cheese until smooth. Combine the sugar and flour, gradually beat into cream cheese.
  • 4Add eggs, beat on low speed just until combined. Beat in sour cream, lime juice,peel,vanilla, and food coloring, until combined.
  • 5Pour into crust. Place pan in a large baking pan; add 1 inch of hot water to larger pan. Bake at 350* for 40-45 minutes or until center is set. Remove pan from water bath. Cool on wire rack. refrigerate for at least 1 hour or overnight. Run knife around sides of pan before removing ring... Enjoy!
