key lime cheesecake

Being on a bowling league is one of the greatest joys I've ever had. I think mainly because the girls have a carry in once a month. I've always been chosen to make dessert. I love to make cheesecakes and I fiddle around with a lot of different flavors. I hope they and you will enjoy my new concoction.

Ingredients
- 2 - 8oz packages cream cheese, room temperature
- 1 - 8 oz packages sour cream, room temperature
- 3 - large eggs, room temperature
- 1/2 teaspoon vanilla flavoring
- 1 tablespoon zest from lime, one if a large lime, if small it may take two or three
- - juice of 1 lime
- 1/2 cup sugar or splenda
- - add a few teaspoons of flour if mixture is too thin, i use cake flour if i have it, if not i use self-rising flour
- CRUST
- 1 1/2 cups graham crackers, crushed
- 1/2 cup melted butter
- 1/4 cup sugar or splenda

Step 1Preheat ove to 350. Prepare crust, mix all ingredients for crust, press onto bottom and sides of springform pan, bake in 350 degree oven for 10 minutes, remove and allow to cool for 10 minutes

Step 2Cream together cream cheese, sour cream and sugar or splenda in a large bowl, do not over mix, but batter should be smooth without any lumps

Step 3Add eggs one at a time, making sure to incorporate each one before adding the next

Step 4Add vanilla flavoring, lime zest and lime juice

Step 5Pour into baked and cooled crust. Place into heated oven and bake for 45 min or until it is only slightly jiggly in the center. I always use a water bath when baking cheesecakes by placing a heat proof bowl filled with water inside the oven on the rack below the cheesecake.
