The lady next door, when I was little, was like a mother to me. Her name was Parthenia. After I was married she still stayed close. Had my husband and I over many times for dinner. This was one of her recipes and one of our favorites. Thanks Par!

Ingredients
- 1 1/3 cups sugar
- 2 cups all purpose flour
- 1/2 teaspoon salt
- 1 - 3 ounces pkg of lime jello
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 5 - eggs
- 1 1/3 cups canola oil
- 3/4 cup orange juice, unsweetened
- 1/2 teaspoon vanilla
- 1 teaspoon lemon extract
- 1/3 cup key lime juice
- 1/3 cup powdered sugar
- - whipping cream, whipped for garnish
- - thin lime slices, for garish
How To Make key lime cake

Step 1Preheat oven to 350. Place dry ingredients into a mixing bowl.

Step 2In seperate bowl, add eggs and oil. Mix till creamy. Add orange juice, vanilla, lemon extract and dry ingredients. Beat till well blended.

Step 3Pour batter into a greased and floured 9x13 pan. Bake for 35-40 minutes. Remove cake from oven and let stand in pan 15 minutes or until just about cooled.

Step 4In small bowl mix lime juice and powdered sugar.

Step 5Poke holes in cake with a fork. Drizzle all over with the lime juice and powdered sugar mix. Cover and refrigerate.

Step 6To serve, cut into squares and top with whipped cream and lime slices. You can use Cool Whip in place of whipped cream.
