The lady next door, when I was little, was like a mother to me. Her name was Parthenia. After I was married she still stayed close. Had my husband and I over many times for dinner. This was one of her recipes and one of our favorites. Thanks Par!

1 1/3 c
2 c
all purpose flour
1/2 tsp
1 - 3 oz
pkg of lime jello
1/2 tsp
baking soda
1 tsp
baking powder
1 1/3 c
canola oil
3/4 c
orange juice, unsweetened
1/2 tsp
1 tsp
lemon extract
1/3 c
key lime juice
1/3 c
powdered sugar
whipping cream, whipped for garnish
thin lime slices, for garish

How to Make Key Lime Cake


  • 1Preheat oven to 350. Place dry ingredients into a mixing bowl.
  • 2In seperate bowl, add eggs and oil. Mix till creamy. Add orange juice, vanilla, lemon extract and dry ingredients. Beat till well blended.
  • 3Pour batter into a greased and floured 9x13 pan. Bake for 35-40 minutes. Remove cake from oven and let stand in pan 15 minutes or until just about cooled.
  • 4In small bowl mix lime juice and powdered sugar.
  • 5Poke holes in cake with a fork. Drizzle all over with the lime juice and powdered sugar mix. Cover and refrigerate.
  • 6To serve, cut into squares and top with whipped cream and lime slices. You can use Cool Whip in place of whipped cream.
