Ingredients

1 1/3 csugar

2 call purpose flour

1/2 tspsalt

1 - 3 ozpkg of lime jello

1/2 tspbaking soda

1 tspbaking powder
-
5eggs
-
1 1/3 ccanola oil
-
3/4 corange juice, unsweetened
-
1/2 tspvanilla
-
1 tsplemon extract
-
1/3 ckey lime juice
-
1/3 cpowdered sugar
-
·whipping cream, whipped for garnish
-
·thin lime slices, for garish
How to Make Key Lime Cake
- Preheat oven to 350. Place dry ingredients into a mixing bowl.
- In seperate bowl, add eggs and oil. Mix till creamy. Add orange juice, vanilla, lemon extract and dry ingredients. Beat till well blended.
- Pour batter into a greased and floured 9x13 pan. Bake for 35-40 minutes. Remove cake from oven and let stand in pan 15 minutes or until just about cooled.
- In small bowl mix lime juice and powdered sugar.
- Poke holes in cake with a fork. Drizzle all over with the lime juice and powdered sugar mix. Cover and refrigerate.
- To serve, cut into squares and top with whipped cream and lime slices. You can use Cool Whip in place of whipped cream.
