Ingredients

1 c
raisins
8 1/2 oz
pineapple, crushed
2 1/2 c
all purpose sifted flour
1 tsp
baking soda
1 tsp
cinnamon
1 tsp
nutmeg
1/2 tsp
cloves
1/2 c
shortening
1/2 c
butter
1 c
sugar
5
eggs
1 c
blackberry jam, seedless
2/3 c
buttermilk
1 c
chopped pecans
confectioners' sugar

Step-By-Step

1Soak raisins for several hours or overnight in the crushed pineapple.
2Sift together flour, baking soda, cinnamon, nutmeg and cloves.
3Cream shortening and butter in large bowl of electric mixer.
4Gradually add sugar and beat until fluffy.
5Add eggs one at a time, beating well after each addition.
6Blend in jam.
7Alternately add sifted dry ingredients and buttermilk to the creamed mixture.
8Blend in pineapple, raisins and pecans.
9Pour batter into 13x9x2-inch pan that has been greased and floured.
10Bake at 350 for 55 to 60 minutes or until done.
11Dust with confectioners' sugar; cut in squares.
12This will freeze.
