  • 1 cup raisins
  • 8 1/2 ounces pineapple, crushed
  • 2 1/2 cups all purpose sifted flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1/2 cup shortening
  • 1/2 cup butter
  • 1 cup sugar
  • 5 - eggs
  • 1 cup blackberry jam, seedless
  • 2/3 cup buttermilk
  • 1 cup chopped pecans
  • - confectioners' sugar

  • Step 1
    Soak raisins for several hours or overnight in the crushed pineapple.
  • Step 2
    Sift together flour, baking soda, cinnamon, nutmeg and cloves.
  • Step 3
    Cream shortening and butter in large bowl of electric mixer.
  • Step 4
    Gradually add sugar and beat until fluffy.
  • Step 5
    Add eggs one at a time, beating well after each addition.
  • Step 6
    Blend in jam.
  • Step 7
    Alternately add sifted dry ingredients and buttermilk to the creamed mixture.
  • Step 8
    Blend in pineapple, raisins and pecans.
  • Step 9
    Pour batter into 13x9x2-inch pan that has been greased and floured.
  • Step 10
    Bake at 350 for 55 to 60 minutes or until done.

    Dust with confectioners\' sugar; cut in squares.
