kellie's vidalia spice cake
I know what you are thinking ...but please give it a try .... I decided to go out on a limb on this recipe and it worked. *smiles* Vidalia onions or other sweet onions are pretty much mandatory.

Ingredients
- 1/2 cup margarine softened
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 - eggs
- 2 teaspoons vanilla
- 1/2 cup buttermilk
- 2 1/4 cups flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 1/2 teaspoons chinese five spice powder
- 1/2 teaspoon nutmeg
- 1 1/2 cups vidalia onions (pureed)
- 1/2 cup chopped pecans (optional)

Step 1Preheat oven to 350, Grease a 10 inch tube pan. Cream together margarine and both sugars until light and fluffy.Cream in eggs, one at a time til each is well blended in. Mix in Vanilla and buttermilk until well blended.

Step 2Sift together four,baking powder,baking soda ,salt and spices. Mix dry ingredients into creamed mixture.Gently stir in Vidalia onion puree and then (pecans are optional) until well blended.

Step 3Pour into tube pan . Bake for 45 minutes.Let the cake cook for 20 minutes and then remove from pan. you can ice if you would like ..but I prefer no icing on mine !! Enjoy
