This cheesecake is so delicious. My uncle's assistant gave this to him one year as a gift during the holidays. I was lucky enough to be able to share his gift :-) Needless to say, I hounded him until he got the recipe for me.

Ingredients
- CRUST
- 1 1/4 cups graham cracker crumbs
- 1/4 cup sugar
- 1/4 cup cocoa powder
- 1/3 cup butter-melted
- CHEESECAKE FILLING
- 16 ounces cream cheese-softened
- 3/4 cup sugar
- 1/2 cup cocoa powder
- 1/4 cup kahlua
- 1 teaspoon vanilla extract
- 2 - eggs
- 1/4 cup strong coffee
- CHEESECAKE TOPPING
- 8 ounces sour cream
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- PREHEAT OVEN 325 DEGREES
How To Make kahlua cheescake

Step 1Combine the graham crackers, sugar, cocoa, and butter (under crust) and mix well. Place in a 9 inch spring form pan and firmly press down the mixture. Bake at 325 degrees for 5 minutes. Let cool. Increase oven temp to 375 degrees.

Step 2Using an electric mixer, beat cream cheese until light and fluffy. Gradually add the sugar and mix well. Beat in the cocoa. Add eggs, one at a time, beating well after each. Stir in the Kahlua, coffee and vanilla. Pour into the spring form pan. Bake at 375 degrees for 25 minutes. (filling will be soft but will firm up as the cake stands). Increase oven temp to 425 degrees.

Step 3Combine sour cream, sugar and vanilla. Spread over hot cheesecake. Bake at 425 degrees for 5 to 7 minutes. Let cool on a wire rack until reaches room temperature. Chill 8 hours or overnight. Remove sides of spring form pan. Ready to serve.
