My son likes to challenge me by asking me to bake something I have never baked before. Challenge accepted! He wanted this cake so I made it for him for his UnBirthday. Challenge accomplished! :)

Blue Ribbon Recipe

Junia hit it out of the park with this one! This cake is sweet and moist, while the frosting is creamy and tangy. Your guests will be wowed with this wonderful cake.

Ingredients

  • CAKE
  • 10 - Oreo cookies, crushed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup butter, softened
  • 2 cups sugar
  • 4 - eggs, separated
  • 1 teaspoon pure vanilla extract
  • 1 cup buttermilk
  • FROSTING
  • 8 ounces cream cheese
  • 1/2 cup butter, softened
  • 4 cups confectioners' sugar
  • 1/2 teaspoon pure vanilla extract
  • 4 - Oreo cookies, crushed
  • 3 tablespoons milk
  • DECORATION
  • 9-10 - whole Oreo cookies

How To Make junia's cookies & cream cake

  • Step 1
    CAKE: Preheat oven to 350°F
  • Step 2
    Line bottoms of 3 - 8-inch pans with paper; grease and flour sides.
  • Step 3
    Crush Oreo's and set aside.
  • Step 4
    Mix flour, baking soda and salt set aside. Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Add egg yolks, 1 at a time, beating well after each addition. Stir in vanilla. Add flour mixture alternating with buttermilk, beating until well blended after each addition.
  • Step 5
    Beat egg whites in another large bowl with electric mixer on high speed until peaks form. Gently stir into batter.
  • Step 6
    Add crushed Oreo's to batter and mix well.
  • Step 7
    Pour evenly into prepared pans making sure to have an even amount of batter in each pan.
  • Step 8
    Bake for 30 minutes or until toothpick inserted into centers come out clean. Immediately run spatula between cakes and sides of pans.
  • Step 9
    Cool 15 minutes; remove cakes from pans. Remove paper. Cool completely on wire racks.
  • Step 10
    FROSTING: Mix cream cheese, butter, confectioners' sugar, crushed Oreo cookies, vanilla, and milk together.
  • Step 11
    Let sit for 15-30 minutes.
  • Step 12
    After cake has cooled, frost bottom layer.
  • Step 13
    Place second layer on top and repeat step 3.
  • Step 14
    Place top layer and frost top and sides covering any trace of cake.
  • Step 15
    Decorate top with Oreo cookies if desired.
