My neighbor Julie brought the cake over as a welcome gift when I moved into the neighborhood. She has since moved away to Utah, but we still keep in touch. She introduced me to this cake when I moved to the Florida Keys. We love it. Key Limes grow through out the Keys they are smaller then the regular limes and they have a lot more juice. However if you can't get Key Limes the regular limes will do just as well. Thanks Julie.... Enjoy

Ingredients

  • 1 package yellow cake mix
  • 1 package instant lemon pudding
  • 1/2 cup water
  • 1/2 cup key lime juice or lime juice fresh is best. don't use the bottled stuff.
  • 1 cup corn, vegetable or canola oil
  • 4 large eggs
  • 1 teaspoon lime zest
  • - ~~~~key lime glaze~~~~
  • 2 cups powdered sugar
  • 1/3 cup fresh key lime juice or regular lime juice again the real stuff

How To Make julie's key lime cake

  • Step 1
    Preheat your oven at 325 degrees. Combine the contents of cake mix with the pudding mix, water, lime juice, oil, eggs, and zest. On low speed in your mixer incorporate all. When all mixed increase speed to medium and mix for whatever minutes cake mix calls for on the box. Pour into a buttered and flour dusted 9 X 12 baking dish and bake at 325 degrees for 45 minutes. When done take out and set aside for 10 minutes. While the cake is warm poke holes with a toothpick all around the top of the cake.
  • Step 2
    For the Glaze: Mix the 2 cups powdered sugar with the 1/3 cup lime juice and mix very very well until sugar is completly dissolved. Pour over the warm cake. You should wait at least an hour before serving or refrigerate and serve later. Enjoy
