Julie's Key Lime Cake
1 pkgyellow cake mix
1 pkginstant lemon pudding
1/2 ckey lime juice or lime juice fresh is best. don't use the bottled stuff.
1 ccorn, vegetable or canola oil
1 tsplime zest
·~~~~key lime glaze~~~~
2 cpowdered sugar
1/3 cfresh key lime juice or regular lime juice again the real stuff
How to Make Julie's Key Lime Cake
- Preheat your oven at 325 degrees.
Combine the contents of cake mix with the pudding mix, water, lime juice, oil, eggs, and zest. On low speed in your mixer incorporate all. When all mixed increase speed to medium and mix for whatever minutes cake mix calls for on the box. Pour into a buttered and flour dusted 9 X 12 baking dish and bake at 325 degrees for 45 minutes. When done take out and set aside for 10 minutes. While the cake is warm poke holes with a toothpick all around the top of the cake.
- For the Glaze: Mix the 2 cups powdered sugar with the 1/3 cup lime juice and mix very very well until sugar is completly dissolved. Pour over the warm cake. You should wait at least an hour before serving or refrigerate and serve later. Enjoy
