jewish apple cake
A friend of mine used to make a wonderful Jewish Apple Cake that I (& my husband) loved. She passed away before I could get the recipe but I found a similar one online & modified it until it tasted like hers. I also switched the sugar to Splenda Sugar Blend since my husband is Diabetic. It turned out great and I get lots of requests to make this cake. Enjoy!

Ingredients
- 6 medium apples (fuji is best)
- 3 teaspoons cinnamon
- 1-2 tablespoon splenda sugar blend
- 3 tablespoons splenda brown sugar blend
- 2 3/4 cups flour, sifted
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup canola oil
- 1 1/4 cups splenda sugar blend
- 1/4 cup orange juice
- 2 1/2 teaspoons vanilla extract
- 4 - eggs
- 1 cup chopped walnuts
How To Make jewish apple cake

Step 1Preheat oven to 350 degrees. Grease a tube pan. Peel, core and chop apples into bite-sized chunks. Toss with cinnamon, 1-2 tbsp Splenda Sugar Blend and the Brown Sugar Blend - set aside.

Step 2Stir together flour, baking powder and salt in a large mixing bowl. In a separate bowl, whisk together oil, orange juice, sugar and vanilla. Mix wet ingredients into the dry ones, and then add eggs, one at a time. Stir in chopped walnuts. Scrape down the bowl to ensure all ingredients are blended together.

Step 3Pour half of batter into prepared pan. Spread half of apples over it. Pour the remaining batter over the apples and arrange the remaining apples on top. You can sprinkle top with additional chopped walnuts. Bake for about 1-1/2 hours, or until a toothpick comes out clean.
