jen's oatmeal cake
This is my "go to" cake to make for potlucks and other church gatherings. It is supper moist and everyone loves it.

Ingredients
- 1 stick butter
- 1 cup quick cooking oats
- 1 1/2 cups boiling water
- PUT ABOVE INGREDIENTS IN BOWL AND LET SIT FOR 20 MINTUES.
- 1 cup packed brown sugar
- 1 cup granulated sugar
- 2 - eggs
- 1 1/2 cups all purpose flour
- 1/2 teaspoon baking soda
- MIX ABOVE INGREDIENTS WELL AND ADD OATMEAL MIXTURE WHEN READY
- 1 stick butter
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/3 cup half and half
- 8-10 ounces packed flaked coconut
How To Make jen's oatmeal cake

Step 1Put stick of butter, quick oats and boiling water into a bowl and let sit for 20 mintues

Step 2While above mixtures is sitting you can mix the remaining ingredients together. Add oatmeal mixture after it has sat for 20 mintues.

Step 3Coat a 9x13 pan with non-stick cooking spray and pour batter in.

Step 4Bake at 350 degrees for 30-40 mintues. Check with toothpick to check doness.

Step 5Afer cake has cooked...in a sauce pan boil butter, granulated sugar, vanilla, half and half and coconut until sugar is melted.

Step 6Spread boiled mixtures over cake and broil until coconut is browned. WATCH CAREFULLY!!! It will brown quickly.
