This is my "go to" cake to make for potlucks and other church gatherings. It is supper moist and everyone loves it.

Ingredients

  • 1 stick
    butter
  • 1 c
    quick cooking oats
  • 1 1/2 c
    boiling water
  • PUT ABOVE INGREDIENTS IN BOWL AND LET SIT FOR 20 MINTUES.

  • 1 c
    packed brown sugar
  • 1 c
    granulated sugar
  • 2
    eggs
  • 1 1/2 c
    all purpose flour
  • 1/2 tsp
    baking soda
  • MIX ABOVE INGREDIENTS WELL AND ADD OATMEAL MIXTURE WHEN READY

  • 1 stick
    butter
  • 3/4 c
    granulated sugar
  • 1 tsp
    vanilla extract
  • 1/3 c
    half and half
  • 8-10 oz
    packed flaked coconut

How to Make Jen's Oatmeal Cake

Step-by-Step

  1. Put stick of butter, quick oats and boiling water into a bowl and let sit for 20 mintues
  2. While above mixtures is sitting you can mix the remaining ingredients together. Add oatmeal mixture after it has sat for 20 mintues.
  3. Coat a 9x13 pan with non-stick cooking spray and pour batter in.
  4. Bake at 350 degrees for 30-40 mintues. Check with toothpick to check doness.
  5. Afer cake has cooked...in a sauce pan boil butter, granulated sugar, vanilla, half and half and coconut until sugar is melted.
  6. Spread boiled mixtures over cake and broil until coconut is browned. WATCH CAREFULLY!!! It will brown quickly.
