Prune cake, ewww! Just hold your potatoes there! Even as children we loved this cake. It's my mother's recipe, so I looked and there are a couple of similar recipes posted, but this one is the quintessential coffee cake. There is no glaze, no frosting, no confectioner's sugar on top. It is perfect and perfectly moist without anything to detract from the pure pleasure of this delightful cake. It is THE most wonderful complement to a good cup of Joe you can imagine!

How To Make jennie's prune cake

  • Step 1
Preheat oven to 350 degrees. Grease and flour a tube pan or two loaf pans. *I prefer the tube.
  • Step 2
Mix sugar and eggs, add prunes mix well; add flour, spices, salt, baking soda, oil and milk. Add the nuts last.
  • Step 3
If using a tube pan, bake for 1 hour or until done. When cooking in two loaf pans, bake about 45-50 minutes. Just get out your trusty tester!
