Delicious at Christmas. I have eaten Fruitcake in the middle of the summer. It keeps well wrapped.

- 1 cup dates, chopped
- 1 teaspoon baking soda
- 1 cup boiling water
- 1 cup sugar
- 2 1/2 cups flour
- 1 cup walnuts, chopped
- 2 large eggs
- 2 tablespoons molasses
- 1 teaspoon real vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1 cup raisins
- 1 cup candied fruit and cherries
How To Make jeans fruitcake

Step 1Grease and flour three mini bread pans. Preheat oven to 350°

Step 2Put dates in a bowl with soda. Pour boiling water on top and set aside.

Step 3In a large mixing bowl, mix together the sugar and flour. Add eggs, vanilla, allspice, nutmeg, cinnamon and molasses. Mix to combine.

Step 4Stir in date mixture.

Step 5Fold in walnuts, raisins and candied fruit. Mix well.

Step 6Pour in prepared pans. Bake until toothpick inserted in center comes out clean.

Step 7Let cool in pan about 10 minutes. Then carefully run knife around edges. Let cool completely on cooling rack

Step 8After letting cool for about 2 hours, I take 3 separate cloths big enough to wrap each loaf - then soak in Manischewitz. Wrap each completely in foil and store in plastic bag.

Step 9Wait about 3 days, so the wine will soak in. Enjoy! Store Fruitcake in Refrigerator. You may need to resoak in about a week.
