Delicious at Christmas. I have eaten Fruitcake in the middle of the summer. It keeps well wrapped.

Ingredients

1 c
dates, chopped
1 tsp
baking soda
1 c
boiling water
1 c
sugar
2 1/2 c
flour
1 c
walnuts, chopped
2 large
eggs
2 Tbsp
molasses
1 tsp
cinnamon
1/2 tsp
nutmeg
1/2 tsp
allspice
1 c
raisins
1 c
candied fruit and cherries

How to Make JEANS FRUITCAKE

Step-by-Step

  • 1Grease and flour three mini bread pans.

    Preheat oven to 350°
  • 2Put dates in a bowl with soda. Pour boiling water on top and set aside.
  • 3In a large mixing bowl, mix together the sugar and flour. Add eggs, vanilla, allspice, nutmeg, cinnamon and molasses. Mix to combine.
  • 4Stir in date mixture.
  • 5Fold in walnuts, raisins and candied fruit.

    Mix well.
  • 6Pour in prepared pans. Bake until toothpick inserted in center comes out clean.
  • 7Let cool in pan about 10 minutes. Then carefully run knife around edges. Let cool completely on cooling rack
  • 8After letting cool for about 2 hours, I take 3 separate cloths big enough to wrap each loaf - then soak in Manischewitz. Wrap each completely in foil and store in plastic bag.
  • 9Enjoy!,
    Store Fruitcake in Refrigerator.

    You may need to resoak in about a week.
