Growing up my mother would make this recipe to take to all our family gatherings when my grandparents were still with us. No matter where she would take it someone always asked her for the recipe which she was more than happy to share. From the first bite I am transported back in time to those gatherings and all those who have gone before me. Sweet memories!

Ingredients

  • 2 cups sugar, white
  • 4 tablespoons shortening, she likes crisco
  • 2 - eggs
  • 2 cups milk
  • 4 cups flour, all purpose
  • 4 teaspoons baking powder
  • 2 - pinches of salt
  • TOPPING
  • 1 - 1 1/2 cups brown sugar, light
  • 3/4 stick butter, cut in cubes and then in half
  • 1 tablespoon cinnamon

How To Make janet lee's coffee cake

  • Step 1
    Mix all ingredients together in a large bowl. I used my standup mixer.
  • Step 2
    Grease a standard size cake pan with cooking spray and pour batter into cake pan.
  • Step 3
    Spinkle the top of the batter with the brown sugar, then drop the chunks of butter all over the top and sprinkle with the cinnamon. Bake in a preheated oven 350° for 35 minutes or until a toothpick stuck in the cake part comes out clean.
  • Step 4
    Note: This recipe can be cut in half to make a smaller cake. It can be served cold or warm. Enjoy.
