Ingredients
- 1 cup sugar
- 1 cup light brown sugar
- 1 cup oil
- 3 cups flour
- 2-3 ripe bananas, diced
- 3 eggs
- 1 can (20 ounces) crushed pineapple with juice
- 1 teaspoon vanilla
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon (optional)
- 1-1/2 cup chopped pecans
How To Make jamaican cake

Step 1Mix together sugar, oil, pecans, flour and bananas in a 9 X 13 inch baking pan.

Step 2Stir in the eggs, pineapple, vanilla, salt and baking soda. Mix well. Do not mash the bananas. Can be topped with shredded coconut.,

Step 3Bake at 350 degrees for 60 minutes. If cake is getting to brown, tent with foil after 40 minutes.
