A cherished recipe in memory of my father. I work with Ricotta I always think of my dad. I would make it with chocolate but since my my little Italian mother is diabetic, I omit the chocolate only when she tells me to! ;)

Ingredients

  • 1 package moist yellow cake mix
  • 2 pounds ricotta cheese
  • 3/4 cup sugar
  • 4 - eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup chopped semi sweet chocolate optional

How To Make italian ricotta cake

  • Step 1
    Preheat oven to 350 degrees F Grease and flour a 9x13 inch pan. Prepare the cake according to the directions on the package. In a medium bowl, combine ricotta cheese, sugar, eggs and vanilla. Mix until smooth. mix in chocolate if desired. Drop by spoonfuls on top of uncooked cake. Bake at 350 degrees F for 1-1/2 hours, or until a toothpick inserted into the cake comes out clean. Sprinkle cooled cake with confectioner’s sugar. Keep refrigerated.
