Ingredients

- - 2 cups powdered sugar
- - 3 eggs
- - 1 1/2 tsp. vanilla extract
- - 1/2 tsp. almond extract
- - 1/2 tsp. rum extract
- - juice and finely grated zest of 1 lemon
- - zest of 1/2 orange, finely grated

Step 1Preheat oven to 400. Lightly grease and flour 9 inch square baking pan. Mix ricotta, sugar and eggs in large bowl. Blend well. Add remaining ingredients and beat by hand until smooth and creamy. Turn into prepared pan and bake until golden brown, about 40 minutes. Put on rack and cool completely. Refrigerate until ready to serve. Cut into small squares. Serves 18 to 24 Gus’s Clam House, Pompano Beach, Florida
