Ingredients
- 2 packages graham cracker crumbs
- 1/3 cup sugar
- 6 teaspoons butter, melted
- 24 ounces cream cheese softened
- 1/2 cup sugar
- 3 teaspoons cocoa
- 1 pint heavy cream
- 5 - eggs, separated
- 2 packages unflavored gelatin
- 1/2 cup Irish cream liqueur
How To Make irish cream cheesecake

Step 1Soften gelatin in small saucepan with 3/4 cup water.

Step 2Stir egg yolks into 1 cup sugar.

Step 3Add to gelatin mixture and cook over medium heat, stirring constantly until mixture thickens and bubbles.

Step 4Cool.

Step 5Beat cheese in large bowl until light and fluffy.

Step 6Add cocoa and beat again.

Step 7Add Irish cream liqueur and beat some more.

Step 8Slowly add gelatin mixture and blend well.

Step 9Beat egg whites until soft peaks form.

Step 10Add remaining 1/2 cup sugar and continue beating until stiff peaks form.

Step 11Fold into cheese mixture.

Step 12Whip cream and fold into cheese mixture.

Step 13Pour into crust and refrigerate several hours or overnight.
