Ingredients

  • 2 packages graham cracker crumbs
  • 1/3 cup sugar
  • 6 teaspoons butter, melted
  • 24 ounces cream cheese softened
  • 1/2 cup sugar
  • 3 teaspoons cocoa
  • 1 pint heavy cream
  • 5 - eggs, separated
  • 2 packages unflavored gelatin
  • 1/2 cup Irish cream liqueur

How To Make irish cream cheesecake

  • Step 1
    Soften gelatin in small saucepan with 3/4 cup water.
  • Step 2
    Stir egg yolks into 1 cup sugar.
  • Step 3
    Add to gelatin mixture and cook over medium heat, stirring constantly until mixture thickens and bubbles.
  • Step 4
    Cool.
  • Step 5
    Beat cheese in large bowl until light and fluffy.
  • Step 6
    Add cocoa and beat again.
  • Step 7
    Add Irish cream liqueur and beat some more.
  • Step 8
    Slowly add gelatin mixture and blend well.
  • Step 9
    Beat egg whites until soft peaks form.
  • Step 10
    Add remaining 1/2 cup sugar and continue beating until stiff peaks form.
  • Step 11
    Fold into cheese mixture.
  • Step 12
    Whip cream and fold into cheese mixture.
  • Step 13
    Pour into crust and refrigerate several hours or overnight.
