individual mocha pudding cakes

I love pudding cakes and I love mocha, so this is a match made in heaven for me! It isn't very sweet, think closer to semisweet chocolate. If eaten hot, right out of the oven, the pudding part is more like a luscious sauce. It makes 4 individual servings, perfect for small families. It can be doubled too!

Ingredients

  • BATTER
  • 1/2 cup all purpose flour
  • 1/2 cup sugar
  • 2 tablespoons cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons milk
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla
  • TOPPING 1
  • 1/4 cup brown sugar, firmly packed
  • 1 1/2 tablespoons cocoa, unsweetened
  • TOPPING 2
  • 1/2 cup hot brewed dark coffee or espresso

How To Make individual mocha pudding cakes

  • Step 1
    Preheat oven to 350. For batter: Mix together flour, sugar, cocoa, baking powder, and salt in medium mixing bowl. Add milk and butter. Stir to well combine.
  • Step 2
    Spray 4 small, oven safe, ramekins or custard cups with nonstick spray. Divide batter evenly into the ramekins.(roughly 1/4 cup of batter in each)
  • Step 3
    For topping 1: In a small bowl combine brown sugar and cocoa. Sprinkle evenly between the ramekins. DO NOT STIR For topping 2:Pour coffee evenly distributed ontop in each ramekin. I do the coffee by measuring 2 tbs into each one. DO NOT STIR
  • Step 4
    Place ramekins on a baking sheet. Place in preheated oven and bake 20-25 minutes or until knife inserted in cake comes out clean, but don't go too far down or you'll get the pudding.
  • Step 5
    Let cool a bit. Enjoy!
