indiana christmas fruitcake

I found this recipe in my Hoosier Cookbook-1974 (Indiana is known as the Hoosier State) this afternoon. I think I may make this for Christmas 2011. I have green tomato mincemeat I canned last summer sitting in the cabinet just waiting to be used in a recipe. No need to add spices as they are already in the mincemeat.

Ingredients
- 2 cups mincemeat
- 2 cups diced candied fruits and peels (1lb)
- 1 cup red candied cherries, chopped
- 2 cups walnuts, chopped
- 1 cup brown sugar
- 1/2 cup butter or margarine
- 2 - eggs
- 1 teaspoon vanilla
- 2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt

Step 1In a large bowl, combine mincemeat, fruits and peels and nuts; set aside.

Step 2In a seperate bowl, combine butter or margarine and sugar. Beat until fluffy. Add eggs and vanilla, mixing well. Sift together flour, baking powder, soda, and salt. Blend into the sugar mixture. Fold into fruit mixture.

Step 3Oil and line 5 small loaf pans (or one large tube pan) with brown paper or parchment paper. Spoon batter into pans, bake at 325 degrees F. for 1 hr and 20 min. Cool cakes in pans; remove. Wrap in foil or clear plastic wrap and store in a cool place.
