Yum! Dreamy Lime Cake that tastes like it was made from scratch. You may start this off with a cake mix, but nobody will ever know! The name of this cake says it ALL!

Ingredients

  • LIME CAKE INGREDIENTS:
  • 1(18.25oz) box white cake mix
  • 1(4 serv box lime jell-o, (dry)
  • 1 1/4 cups bottled non-alcoholic margarita mix
  • 2 large egg whites
  • 1/2 cup canola oil
  • 1/3 cup water
  • 1 tablespoon lime juice, fresh squeezed
  • 1 tablespoon lime zest
  • 10 to 20 - drops green food coloring, if desired
  • LIME ICING:
  • 4 ounces whipped cream cheese
  • 1 - 8 oz. packages frozen cool-whip, thawed
  • 1 package lime jell-o, dry (4 serving size)
  • 1 to 2 tablespoons bottled, non-alcoholic, margarita mix
  • 1 teaspoon lime zest

How To Make i'm in love with lime "cake aka "margarita cake"

  • Step 1
    Preheat: Oven to 350 degrees F. Coat: A 9x13x2-inch pan with cooking spray.
  • Step 2
    In: A large mixing bowl, beat together cake mix, 1 pkg. dry lime jell-o, egg whites, oil, margarita mix, green food coloring, lime juice, lime zest and water until well blended. Pour: Into prepared pan.
  • Step 3
    Bake: About 30 minutes, or until a toothpick inserted in center comes out clean. Remove: From oven and let cool.
  • Step 4
    Meanwhile, In a medium mixing bowl, make frosting by beating whipped cream cheese and thawed cool-whip with electric mixer. Add: Dry lime jell-o (slowly) and continue to mix well. Add: Lime zest and 1 to 2 Tbsp. bottled margarita mix and continue to mix well with mixer until light and fluffy. Frost: Cooled cake, cover loosely, and chill at least one hour before serving. Store: Covered leftovers in refrigerator. ENJOY!
