ilsa's grandmother's carrot cake
This is a recipe I received from my daughter in law from her grandmother. It is the best carrot cake I have ever had and is so moist and fresh tasting.

Ingredients
- 1 1/2 cups oil
- 2 cups sugar
- 4 - eggs
- 2 cups sifted flour
- 1 teaspoon cinnamon
- 2 teaspoons baking powder
- 1 teaspoon salt
- 3 cups grated carrots
- 1 cup chopped nuts
- 1 cup coconut
How To Make ilsa's grandmother's carrot cake

Step 1Cream together oil and sugar. Shift dry ingredients and add to oil/sugar mixture. Fold in carrots, nuts and coconut. Pour into greased and floured 9x13 cake pan.

Step 2Bake at 350 degrees for 1 hour.

Step 3Frosting: Mix together 6 oz powdered sugar, 1/2 tsp vanilla and 1/2 stick softened butter.
