ilsa's grandmother's carrot cake

This is a recipe I received from my daughter in law from her grandmother. It is the best carrot cake I have ever had and is so moist and fresh tasting.

Ingredients

  • 1 1/2 cups oil
  • 2 cups sugar
  • 4 - eggs
  • 2 cups sifted flour
  • 1 teaspoon cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 3 cups grated carrots
  • 1 cup chopped nuts
  • 1 cup coconut

How To Make ilsa's grandmother's carrot cake

  • Step 1
    Cream together oil and sugar. Shift dry ingredients and add to oil/sugar mixture. Fold in carrots, nuts and coconut. Pour into greased and floured 9x13 cake pan.
  • Step 2
    Bake at 350 degrees for 1 hour.
  • Step 3
    Frosting: Mix together 6 oz powdered sugar, 1/2 tsp vanilla and 1/2 stick softened butter.
