This is a recipe I received from my daughter in law from her grandmother. It is the best carrot cake I have ever had and is so moist and fresh tasting.

    sifted flour
  • 1 tsp
  • 2 tsp
    baking powder
  • 1 tsp
  • 3 c
    grated carrots
  • 1 c
    chopped nuts
  • 1 c

How to Make Ilsa's Grandmother's Carrot Cake


  1. Cream together oil and sugar. Shift dry ingredients and add to oil/sugar mixture. Fold in carrots, nuts and coconut. Pour into greased and floured 9x13 cake pan.
  2. Bake at 350 degrees for 1 hour.
  3. Frosting:

    Mix together 6 oz powdered sugar, 1/2 tsp vanilla and 1/2 stick softened butter.
