icebox cake - a childhood favorite
This is such a very simple recipe which I remember my mom making when I was little. It was a favorite of my big brothers, and I wished my mom made it more often. Prepare it the day before you intend to serve it, and you can decorate it for Christmas with a little color on top.

- 1 package chocolate wafers
- 1 pint heavy cream, whipped
- 1 teaspoon vanilla extract
- 1 tablespoon sugar
- 6 - maraschino cherries

Step 1Whip the cream and stir in vanilla and sugar. Line a loaf pan with foil or plastic wrap, enough to fold over and seal the contents while stored in the freezer overnight.

Step 2Place the first cooky on a flat surface covered with foil or plastic wrap (enough as described above), and top it with a spoonful of the cream. *Place another cooky on top of that, tapping gently to flatten the cream, and place another spoonful of cream on that cooky, continue from * until the length is enough to fit the loaf pan.

Step 3Begin a second row of cookies and cream and place this in line with the first row, making a double row, which should eventually fill the loaf pan. Wrap the foil or plastic wrap to seal all. Place in the freezer.

Step 4On the day you plan to serve it,remove from loaf pan and place on a pretty plate,and decorate the top with cut cherries and green leaves made of mint jelly candies, and have prepared a good quality hot fudge sauce to pour over each serving.
