ice cream cake (peanut butter sundae)
When I was a kid, my mom would take us to Friendly's. I would always get the peanut butter sundae. It was two scoops of vanilla ice cream, hot fudge, peanut butter sauce, crowned with an upside down sugar cone, a whipped cream border, and studded with Reese's pieces. OMG! I always wanted a giant one, now my peanut butter loving friends, I present to you my version of that little girl's sundae. This was actually my birthday cake this year. Yes, I'm a loser that makes her own birthday cakes.

If you grew up going to the famous restaurant chain for the delicious sundae, this peanut butter ice cream cake mimics the flavors and is delicious. Creamy vanilla ice cream sits atop a peanut butter cookie crumb crust. It's topped with a homemade peanut butter sauce (that you can use on a bowl of ice cream too) and drizzled with chocolate sauce. Peanut butter candies on top pack the last punch of peanut butter flavor. Easy to prepare, this is a great summertime treat. The hardest part is waiting for the cake to firm up in the freezer.
Ingredients
- 1/2 gallon ice cream
- 1/4 cup melted butter
- 17 - Nutter Butter sandwich cookies or other cookie of choice
- 1/2 cup chocolate sauce
- 2 bags Reeses pieces
- PEANUT BUTTER SAUCE
- 3/4 cup peanut butter
- 2 tablespoons butter
- 2 teaspoons granulated sugar
How To Make ice cream cake (peanut butter sundae)

Step 1Let the ice cream get soft enough to smooth with a large spoon. In a bowl or resealable plastic bag, crush the cookies.

Step 2Mix crumbs with the melted butter until it looks like wet sand. Put in the bottom of a springform pan (cheesecake pan). Push into sides and bottom. This is the crust of the ice cream cake.

Step 3Dump in the ice cream and smooth into sides and holes with a big spoon. Now put it in the freezer while you make your peanut butter sauce.

Step 4Put the peanut butter, butter, and granulated sugar for the sauce in a bowl in the microwave. Cook for about 20 seconds at a time, stirring after each time until it's all melted together. Make sure you don't do it too many times or it will burn. Let it cool for maybe a minute.

Step 5Take the cake back out of the freezer. Spread the peanut butter sauce over the ice cream. Place back in the freezer to let the first layer get cold and set up before adding chocolate.

Step 6Once set up, drizzle the chocolate.

Step 7Top the last layer with candy before you put back in the freezer to finish setting up.

Step 8Unmold and slice.

Step 9******OPTIONAL****** To make it look more pleasing to the eye, wait until it freezes up completely. Let it sit out for 10 minutes and then unmold it. Frost the sides with whipped cream like you would a cake and let that freeze up too!
