iantha's 7-up cake

My mom, Iantha Crigler, passed away in February of 2012 at the age of 95. Until Alzheimer's slowed her down a few years ago, she was the best cook I ever knew. This cake is a common recipe, but she didn't dare show up at a church potluck without it. When SHE made it, it was something special! It only needs a glaze, but in one of these photos, I added the Peeps Sunflower from another Just A Pinch recipe to make it pretty for Easter. I added a few photos of Mom in the directions for those who wanted to see them. You'll see she never lost her sense of humor or her ability to have fun!

Ingredients For iantha's 7-up cake

  • 1 box
    cake mix, lemon,white or yellow (lemon is best!)
  • 1 box
    instant lemon pudding mix
  • 3
    eggs
  • 3/4 c
    vegetable oil
  • 1 can
    7-up (or any lemon-lime soda pop) 12-oz
  • GLAZE
  • 3 Tbsp
    lemon juice
  • 3/4 c
    powdered sugar (approx.)
  • DOES NOT DO WELL IF DOUBLED!

How To Make iantha's 7-up cake

    Mix all ingredients together.
  • Cutting up at her 94th Birthday Party, wearing silly flamingo glasses from the dollar store.

    Pour mixture into a 9x13 baking pan sprayed with cooking spray (or greased).
  • Mom at her 90th Birthday party--still living independently and driving!

    Bake until done. (What can I say? That's what my Mom's recipe card says! :P I'm pretty sure that I used the directions on the cake mix as a guideline and then tested it with a toothpick and watched for it to pull away from the sides of the pan.)

    GLAZE: Stir the powdered sugar into the lemon juice and spread on top of hot cake. If you want to be a bit fancy, add a little lemon zest to the glaze. (Jan says: This isn't a "pretty" cake. If you want to make it fancier, you could certainly frost it with a vanilla or lemon frosting and sprinkle it with lemon zest or even yellow sprinkles. In the photo I just added on 4/7/12 I decorated it for Easter with a Peeps Sunflower that I borrowed from another JustAPinch Recipe. But it's so good with just the glaze that frosting would be overkill, IMHO! :P)
