This is a great cake. It reminds me of banana bread with cream cheese icing.

Ingredients

  • CAKE
  • 2 cups granulated sugar
  • 3 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda

  • 1 can crushed pineapple, undrained (8 oz)
  • 3 large eggs
  • 1 1/2 cups vegetable oil
  • 1 1/2 teaspoons vanilla extract
  • 2 cups chopped pecans

  • 1 package cream cheese (8 oz)
  • 1 stick margarine
  • 1 box powdered sugar
  • 1 teaspoon vanilla extract

We doubled the frosting recipe to ensure the cake was completely covered in frosting. The cake and the frosting are very soft. We used a straw in the center of the cake to support the layers and prevent them from sliding.
