Ingredients

  • HUMMINGBIRD CAKE
  • 3 cups all purpose flour
  • 2 cups sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon, ground
  • 3 - egg--beaten
  • 1 1/2 cups vegetable oil
  • 1 1/2 teaspoons vanilla extract
  • 1 can pineapple, crushed
  • 2 cups bananas -- chopped " about {4}"
  • 2 cups pecans, chopped
  • CREAM CHEESE FROSTING
  • 2 packages 8 oz softened cream cheese
  • 1 cup butter -- {2} sticks
  • 32 ounces confectioners' sugar
  • 2 teaspoons vanilla extract
  • 1 dash salt

How To Make hummingbird cake

  • Step 1
    In large bowl combine dry ingredients .. Then add eggs and oil; stir until moistened.
  • Step 2
    Stir in vanilla,pineapple, banana's, and one cup chopped pecans.
  • Step 3
    Spoon batter into {3} greased and floured 9-inch cake pans. Bake at 350 for 25 minutes
  • Step 4
    Cool in pans 10 minutes and remove from pans on wire racks and cool completely.
  • Step 5
    CREAM CHEESE FROSTING ......
  • Step 6
    MIX IN LARGE BOWL WITH ELECTRIC MIXER: Beat cream cheese and butter until smooth.
  • Step 7
    Add confectioners sugar and beat until light and fluffy. Stir in vanilla and salt.
  • Step 8
    Generously spread frosting between cooled cake layers and on side and top of cake.
  • Step 9
    Garnish with remaining {1} cup pecans
