Ingredients

HUMMINGBIRD CAKE

3 c
all purpose flour
2 c
sugar
1 tsp
salt
1 tsp
baking soda
1 tsp
cinnamon, ground
3
egg--beaten
1 1/2 c
vegetable oil
1 1/2 tsp
vanilla extract
1 can(s)
pineapple, crushed
2 c
bananas -- chopped " about {4}"
2 c
pecans, chopped

CREAM CHEESE FROSTING

2 pkg
8 oz softened cream cheese
1 c
butter -- {2} sticks
32 oz
confectioners' sugar
2 tsp
vanilla extract
1 dash(es)
salt

How to Make Hummingbird Cake

Step-by-Step

  • 1In large bowl combine dry ingredients .. Then add eggs and oil; stir until moistened.
  • 2Stir in vanilla,pineapple, banana's, and one cup chopped pecans.
  • 3Spoon batter into {3} greased and floured 9-inch cake pans.
    Bake at 350 for 25 minutes
  • 4Cool in pans 10 minutes and remove from pans on wire racks and cool completely.
  • 5CREAM CHEESE FROSTING ......
  • 6MIX IN LARGE BOWL WITH ELECTRIC MIXER:
    Beat cream cheese and butter until smooth.
  • 7Add confectioners sugar and beat until light and fluffy. Stir in vanilla and salt.
  • 8Generously spread frosting between cooled cake layers
    and on side and top of cake.
  • 9Garnish with remaining {1} cup pecans
