Ingredients
- HUMMINGBIRD CAKE
- 3 cups all purpose flour
- 2 cups sugar
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon, ground
- 3 - egg--beaten
- 1 1/2 cups vegetable oil
- 1 1/2 teaspoons vanilla extract
- 1 can pineapple, crushed
- 2 cups bananas -- chopped " about {4}"
- 2 cups pecans, chopped
- CREAM CHEESE FROSTING
- 2 packages 8 oz softened cream cheese
- 1 cup butter -- {2} sticks
- 32 ounces confectioners' sugar
- 2 teaspoons vanilla extract
- 1 dash salt
How To Make hummingbird cake

Step 1In large bowl combine dry ingredients .. Then add eggs and oil; stir until moistened.

Step 2Stir in vanilla,pineapple, banana's, and one cup chopped pecans.

Step 3Spoon batter into {3} greased and floured 9-inch cake pans. Bake at 350 for 25 minutes

Step 4Cool in pans 10 minutes and remove from pans on wire racks and cool completely.

Step 5CREAM CHEESE FROSTING ......

Step 6MIX IN LARGE BOWL WITH ELECTRIC MIXER: Beat cream cheese and butter until smooth.

Step 7Add confectioners sugar and beat until light and fluffy. Stir in vanilla and salt.

Step 8Generously spread frosting between cooled cake layers and on side and top of cake.

Step 9Garnish with remaining {1} cup pecans
