This is one of my grandmother's long time recipes and one of my favorites. You'll notice a couple of old school baking with "hand stir" and "grease and flour" pan. Grandma has never deviated from that. And who am I to argue with and 97 year old pro. :)

Ingredients

  • 3 cups sifted all purpose flour
  • 2 cups sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3 - eggs
  • 1 1/2 cups vegetable oil
  • 1 1/2 cups crushed pineapple
  • 1 1/2 cups bananas,ripe, mashed
  • 1 cup chopped pecans
  • 1 1/2 teaspoons vanilla

How To Make hummingbird cake

  • Step 1
    Preheat oven to 350 degrees and grease and flour a 9 x 13 pan.
  • Step 2
    Hand stir the first five ingredients in a large bowl.
  • Step 3
    Add oil and eggs and stir.
  • Step 4
    Add fruits, nuts, and vanilla, mix well.
  • Step 5
    Pour batter into cake pan and bake for 30 minutes.
