This is one of my grandmother's long time recipes and one of my favorites.
You'll notice a couple of old school baking with "hand stir" and "grease and flour" pan. Grandma has never deviated from that. And who am I to argue with and 97 year old pro. :)

  • 3 c
    sifted all purpose flour
  • 2 c
  • 1 tsp
  • 1 tsp
    baking soda
  • 1 tsp
  • 3
  • 1 1/2 c
    vegetable oil
  • 1 1/2 c
    crushed pineapple
  • 1 1/2 c
    bananas,ripe, mashed
  • 1 c
    chopped pecans
  • 1 1/2 tsp

How to Make Hummingbird Cake


  1. Preheat oven to 350 degrees and grease and flour a 9 x 13 pan.
  2. Hand stir the first five ingredients in a large bowl.
  3. Add oil and eggs and stir.
  4. Add fruits, nuts, and vanilla, mix well.
  5. Pour batter into cake pan and bake for 30 minutes.
