self rising flour
2 c
eggs ( beaten )
1 1/2 c
canola oil
8 oz can(s)
crushed pineapple ( undrained )
1 c
chopped pecans
2 c
chopped bananas
1 tsp
1 1/2 tsp
vanilla flavoring

How to Make Hummingbird Cake


  • 1Preheat oven 350 degrees

    Combine flour, sugar and cinnamon in a large mixing bowl. Add eggs and oil. Stirring well until all dry ingredients are moistened.DO NOT BEAT...

    Stir in vanilla, pineapple with juice and 1 cup chopped pecans. Add bananas. Mix very well but do not beat with a mixer.

    Pour batter into 3 well greased and floured 9 inch cake pans.

    Bake for 25 - 30 minutes. Cool in pans for about 10 minutes and then remove them to cool completely before frosting.
  • 2Cream Cheese Frosting

    1 8 oz pkg cream cheese ( softened to room temp )
    1/2 cup butter ( softened to room temp )
    1 box confection sugar
    1 t. vanilla flavoring
    1/2 to 1 cup chopped pecans

    Combine cream cheese and butter. Beat well. Add sugar gradually beating until light and fluffy. Stir in vanilla. Beat well.

    Frost between layers, top and sides

    Sprinkle chopped pecans on top of cake
