Ingredients
- 2 1/2 cups sr flour
- 1 teaspoon cinnamon
- 1 cup castor sugar
- 2 - eggs lightly beaten
- 1/2 cup olive oil
- 1 cup walnuts (chopped)
- 2 - ripe bananas (mashed)
- 10 ounces tin crushed pineapple in juice
- - icing sugar to dust
- 9 ounces cream cheese chopped
- 2 tablespoons icing sugar
- 1/4 teaspoon creamed honey
How To Make humming bird muffins

Step 1Sift flour and cinnamon into large bowl, stir in sugar.

Step 2Add egg, oil, walnuts, banana and pineapple. Stir until combined.

Step 3Spoon mixture into muffin trays 3/4 way up the sides. I use muffin cups inside muffin tin.

Step 4Bake 35 min until cooked.

Step 5TOPPING: Place all ingredients into a bowl and beat until combined. Put topping on your muffins when cooled. Decorate with toasted shredded coconut and tropical flower.
