Ingredients

2 1/2 c
sr flour
1 tsp
cinnamon
1 c
castor sugar
2
eggs lightly beaten
1/2 c
olive oil
1 c
walnuts (chopped)
2
ripe bananas (mashed)
10 oz
tin crushed pineapple in juice
icing sugar to dust
9 oz
cream cheese chopped
2 Tbsp
icing sugar
1/4 tsp
creamed honey

How to Make Humming Bird Muffins

Step-by-Step

  • 1Sift flour and cinnamon into large bowl, stir in sugar.
  • 2Add egg, oil, walnuts, banana and pineapple. Stir until combined.
  • 3Spoon mixture into muffin trays 3/4 way up the sides.
    I use muffin cups inside muffin tin.
  • 4Bake 35 min until cooked.
  • 5TOPPING:
    Place all ingredients into a bowl and beat until combined.
    Put topping on your muffins when cooled. Decorate with toasted shredded coconut and tropical flower.
