Ingredients

  • 2 1/2 c
    sr flour
  • 1 tsp
    cinnamon
  • 1 c
    castor sugar
  • 2
    eggs lightly beaten
  • 1/2 c
    olive oil
  • 1 c
    walnuts (chopped)
  • 2
    ripe bananas (mashed)
  • 10 oz
    tin crushed pineapple in juice
  • ·
    icing sugar to dust
  • 9 oz
    cream cheese chopped
  • 2 Tbsp
    icing sugar
  • 1/4 tsp
    creamed honey

How to Make Humming Bird Muffins

Step-by-Step

  1. Sift flour and cinnamon into large bowl, stir in sugar.
  2. Add egg, oil, walnuts, banana and pineapple. Stir until combined.
  3. Spoon mixture into muffin trays 3/4 way up the sides.
    I use muffin cups inside muffin tin.
  4. Bake 35 min until cooked.
  5. TOPPING:
    Place all ingredients into a bowl and beat until combined.
    Put topping on your muffins when cooled. Decorate with toasted shredded coconut and tropical flower.
