Ingredients

  • 2/3 c
    butter
  • 1 1/2 c
    sugar
  • 2
    eggs
  • 2 c
    flour
  • 2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 c
    milk
  • 1 1/2 c
    huckleberries (fresh or frozen) (can also use blueberries or blackberries)
  • 1/4 c
    sugar
  • 1/2-1 tsp
    cinnamon

How to Make Huckleberry Coffee Cake

Step-by-Step

  1. Grease & flour 13x9" pan
    Preheat oven to 350
  2. Cream together butter & sugar
    Add eggs one at a time & beat thoroughly
  3. Sift together flour, baking powder & salt & add alternately with milk
  4. Spread batter into pan and put berries on top.
    Mix together sugar and cinnamon, sprinkle on top and dot with butter.
    Bake at 350 for 45 minutes.
