This DELICIOUS recipe comes from a distant relative by marriage and is so delicous, I just had to share it with everyone. If you can't find Huckleberries, you can use Apricots, Cherries, Peaches (the next best) or any other fruit you like.

Ingredients For huckleberry cheesecake

  • 1 box
    Jello Cheese Cake Mix
  • 1-8oz pkg
    cream cheese
  • 1 jar
    Huckleberry Jam
  • water

How To Make huckleberry cheesecake

    FOLLOW DIRECTIONS ON BACK OF CHEESECAKE PACKAGE AND ADD THE PACKAGE OF SOFTENED CREAM CHEESE. MIX ACCORDING TO DIRECTIONS, MAKING SURE THAT THERE AREN’T ANY LUMPS. HINT: MIXING THE CREAM CHEESE AND PACKAGED FILLING TOGETHER FIRST SEEMS TO WORK).

    SPOON THE FILLING INTO THE GRAHAM CRACKER CRUST (WHICH SHOULD BE PREPARED BY NOW) AND SMOOTH.

    PREPARE THE HUCKLEBERRY TOPPING BY ADDING A SMALL AMOUNT OF WATER (NOT TOO MUCH) TO THE JAM AND MIXING THOROUGHLY. USING A SPOON, COVER THE TOP OF THE CHEESECAKE. SMOOTH OVER ENTIRE TOP. YOU CAN USE AS MUCH OF THE JAM AS YOU WISH. I FIND THAT ABOUT ½ A JAR IS ENOUGH.

    VARIATIONS: YOU CAN USE SMALL CLEAR PLASTIC CUPS (THE BATHROOM ONES WORK GREAT) TO MAKE CHEESECAKE SHOTS. JUST PUT A SMALL AMOUNT OF CRUST MIX IN BOTTOM, PAT DOWN AND PUT FILLING ON TOP. SPOON A SMALL AMOUNT OF THE TOPPING OVER. FUN FOR BUNKO PARTIES AND POTLUCKS. IT'S ALWAYS A HIT!
